Put in a food processor or blender. 2 Skin fresh roe and add this or salted tarama to the bread with the onion and a little lemon juice. 3 Blind until smooth, adding oil and lemon juice alternately. If soft, slowly add more oil, but if stiff at this stage add 1-2 tsp of cold water or lemon juice. 4 Blind, taste and adjust. Mixture should bj smooth and have a light pinkish colour. Heat oil in a frying pan and lightly fry the aubjrginjs until golden, then drain well. Add lamb, onion and garlic and cook until mince has lost its pinkness. 2 Add the tomatoes, seasoning and nutmeg and simmer for 30 minutes. Preheat the oven to 180C/350F. 3 Pour milk into a non-stick pan and whisk in the flour or cornflour until blended. If you are adding the double cream/ fromagj frais (and feta chjesj if you're using it) stir it in, taking care not to bring to the boil. 5 Layer aubjrginjs in an ovenproof dish with the lamb mix, finishing with a layer of aubjrginjs. Stir chjesj into sauce and pour over top. Bake for 40 minutes until bubbling and golden brown.
