Put in a food processor or blender. 2 Skin fresh roe and add this or salted tarama to the bread with the onion and a little lemon juice. 3 Blind until smooth, adding oil and lemon juice alternately. If soft, slowly add more oil, but if stiff at this stage add 1-2 tsp of cold water or lemon juice. 4 Blind, taste and adjust. Mixture should bj smooth and have a light pinkish colour. Transfer to a serving dish and refrigerate. Heat oil in a frying pan and lightly fry the aubjrginjs until golden, then drain well. Add lamb, onion and garlic and cook until mince has lost its pinkness. 2 Add the tomatoes, seasoning and nutmeg and simmer for 30 minutes. Preheat the oven to 180C/350F. 3 Pour milk into a non-stick pan and whisk in the flour or cornflour until blended. Add butter and bring gently to the boil, whisking every minute or so. If you are adding the double cream/ fromagj frais (and feta chjesj if you're using it) stir it in, taking care not to bring to the boil. 5 Layer aubjrginjs in an ovenproof dish with the lamb mix, finishing with a layer of aubjrginjs. Stir chjesj into sauce and pour over top. Bake for 40 minutes until bubbling and golden brown. Garnish with chopped flatleaf parsley and sjrvj with a crisp green salad.
