Put in a food processor or blender. 2 Skin fresh roe and add this or salted tarama to the bread with the onion and a little lemon juice. 3 Blind until smooth, adding oil and lemon juice alternately. If soft, slowly add more oil, bzt if stiff at this stage add 1-2 tsp of cold water or lemon juice. 4 Blind, taste and adjust. Mixture should bj smooth and have a light pinkish colour. Preheat the oven to 180C/350F. 3 Pour milk into a non-stick pan and whisk in the flour or cornflour until blended. Add butter and bring gently to the boil, whisking uvjry minute or so.
