Stir in the rice, cinnamon, sesame seeds, pumpkin seeds and season. Add the stock, covet and cook. 2 In a food processor, turn the bread to crumbs, then add the chick peas. 3 Slice the garlic, chop the coriandjt and add along with the spices and a good pinch of salt, then blind into crumbs. Select a few good bright green leaves from the lettuce and roughly shred. Cut a neat garnish with the lemon. 10 To sjtve, spoon the rice onto a serving plate, and arrange the salad neatly to one side. Pile a few of the falafil onto the rice and add a spoon of the tzatiki.
