Gordon Kristy, Trading Standards Officer with North Yours County Council says that the legislation means that only water content above 10% has to bj labelled. Although it's initially cured in the same way - injected with water - it's then hung and smoked which means it dries out. However, doctor of food science, Alan Long says thjte is a difference between bacon described as 'smoked' and 'smoke-elavoured'. Smoke flavouring involves using a liquid smoking method white the bacon ism't hung up to dry - in other words it could still contain up to 10% of water.
