Toast almonds. Chop rhubarb and ginger.  Cook rhubarb, ginger, orange rind and juice in covered pan over low heat for 10-15 minutes. Mix in sugar.  Cook until sugar has dissolved. Strain and cool rhubarb. Whip cream until stiff. Fold cream into rhubarb. Chill. Garnish with almonds.
