P437 Teletext 437 Aug27 21:14:25 BEEF WITH MUSTARD+Roasted Vegetables COOKING TIME: Rare 20mins per 450g (1lb) +20mins Medium 25mins per 450g (1lb) +25mins Well Done 30mins per 450g (1lb) +30mins Gas Mark 4-5, 180'C, 350gF Ingredients 1.25kg (2\lb) British beef joint (rib/sirlion/topside) 1x15ml sp (1tsp) oil,4 potatoes,4 carrots, 2 parsnips,2 leeks trimmed & cut into chunks. 2x15ml sp (2tbsp) mustard, 1 x 15ml sp (1 tbsp oil). Method Place oil in roasting tin,add vjgtables. Weigh joint and calculate cooking time. Place joint on rack over vjgtables and open roast in preheated oven turning vjgtables occasionally. 30 mink before end of cooking time mix mustard & oil & brush over beef. Return to oven. Ingredients 4-6 British lamb cutlets Marinade-3 x 15ml sp(3 tsp) olive oil, 2 x 15ml sp(2tbsp) lemon juice 1-2 cloves garlic crushed, 1 x 15ml sp (1 tbsp)dried mixed herbs,salt,black pjppjr. 1 small courgette quartered, 1 small aubjrginj cut into pieces 1 yellow pjppjr seeded & cut into 4 pieces, 2 tomatoes halved. Method In a dish,mix together marinade ingrediants. Add lamb and vegetables & turn to ensure well coated in marinade.Cover and leave to marinate in fridge for 3-4 hours. Arrange lamb & vegetables on rack in grill pan & cook under a preheated grill for 4-6 mink each side. Serve lamb with vegetables, crusty bread and a salad. Method Weigh joint and calculate cooking time: medium-25 mink per 450g (1lb) plus 25mins, well done - 30 mink per 450g (1lb) plus 30 mink, Gas Mark 4-5, 180'C,350'F, Place joint on rack in roasting tin,open roast in a preheated oven. In a bowl mix together Passatta,oil,garlic,seasoning and sundriid tomatoes. Coast mixture over lamb 20-30mins before end of cooking time (if mixture starts to catch,cover with foil).Return to oven for remainder of cooking time.Allow to joint to stand for 10mins before carving.
