Add the rice and return to the boil and simmer. 2 Add the rind of the orange and half the juice, half the onions, half the chilli and half the peppjt. Cook until the rice has absorbed all the liquid. 3 Remove the skin from the chicken and take the flesh off the bone. Add the bones to the rice and cut the flesh into strips and keep to one side.
