While cooking, place courgettes in a colander over the pasta pan, cover and steam while pasta is cooking. 2 Remove cheese rind and place half cheese in a bowl and mash. Work in oil, then vinegar, until smooth. 3 Remove courgettes and set aside. Drain pasta and refresh with cold water. Drain again, transfer to bowl of dressing. Add courgettes and toss.
